Ingredients
  

For the Filling
  • 1 cup quinoa (uncooked) Can substitute with brown rice.
  • 1 can black beans (drained and rinsed) Adds protein and fiber.
  • 1 cup corn (frozen or canned) Fresh corn works well if in season.
  • 1 cup diced tomatoes (canned) Fresh tomatoes are a delicious alternative.
  • 1 small onion (diced) Shallots can be used for a milder taste.
  • 2 cloves garlic (minced) Increase to 3 cloves if desired.
For the Cabbage
  • 8 large cabbage leaves (blanched) Choose outer leaves for easy rolling.
  • 1 tablespoon olive oil Avocado oil is a fine substitute.
For the Sauce
  • 2 cups marinara sauce Homemade sauce can elevate the dish.
  • 1 teaspoon Italian seasoning Use herbes de Provence for a twist.

Method
 

Preparation
  1. Prepare the cabbage by boiling a large pot of water. Once it's bubbling, gently submerge the whole head of cabbage for about 2-3 minutes until the leaves soften and become pliable.
  2. Remove the cabbage from the pot and let it cool slightly. Carefully peel off about 10-12 outer leaves, being cautious not to tear them.
  3. Mix the filling in a bowl by combining cooked rice, diced vegetables, black beans, herbs, and spices. Stir until everything is evenly coated.
  4. Fill each cabbage leaf with a generous spoonful of the mixture. Fold in the sides and roll tightly from the base.
  5. Arrange the stuffed cabbage rolls seam-side down in a baking dish.
  6. Cover the dish with foil and bake in a preheated oven at 350°F for 30 minutes.
  7. Uncover and bake for an additional 10-15 minutes until the tops are lightly golden brown.
