Ingredients
  

Chicken
  • 2 lbs boneless, skinless chicken breasts
Taco Seasoning
  • 1 packet taco seasoning mix
Vegetables
  • 1 cup salsa mild or spicy, based on preference
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup diced bell pepper any color
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup chopped fresh cilantro
  • 1 cup sliced jalapeños optional

Method
 

Cooking
  1. Place the chicken breasts in the crockpot.
  2. Sprinkle the taco seasoning over the chicken.
  3. Add the salsa, black beans, corn, and diced bell pepper on top.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is cooked through and shreds easily.
  5. Once cooked, shred the chicken in the crockpot using two forks and stir to combine with the other ingredients.
  6. Serve warm with desired toppings.
