Method
 

Making the Batter
  1. Whisk together 1 cup of all-purpose flour, 2 large eggs, and 1 ½ cups of milk in a large mixing bowl until smooth.
  2. Add a pinch of salt and 2 tablespoons of melted butter to the batter.
  3. Rest the batter for at least 30 minutes in the refrigerator.
Cooking the Crepes
  1. Heat a non-stick skillet over medium heat and lightly grease it with butter.
  2. Pour about ¼ cup of batter into the skillet, swirling to cover the surface evenly. Cook for about 1-2 minutes until the edges lift slightly and the bottom is golden brown.
  3. Flip carefully using a spatula and cook for another 1-2 minutes on the opposite side until golden.
  4. Fill each crepe with your desired savory filling—think sautéed mushrooms, spinach, or cheese!
