  • 1 can chickpeas drained and rinsed
  • 2 tablespoons tahini
  • 1 clove garlic minced
  • 2 tablespoons olive oil plus more for drizzling
  • 1 tablespoon lemon juice freshly squeezed
  • 1 cup roasted red peppers jarred or homemade
  • 1/2 teaspoon cumin

Method
 

Preparation
  1. In a food processor, combine the chickpeas, tahini, garlic, olive oil, lemon juice, roasted red peppers, cumin, and salt.
  2. Blend until smooth, adding water as needed to reach desired consistency.
  3. Taste and adjust seasoning if necessary.
  4. Transfer to a serving bowl and drizzle with olive oil before serving.
