Prepare Peach Puree
- In a blender, combine the peeled and pitted peaches with sugar (if using). Blend until smooth.
Mix Cocktail
- In a champagne flute, add about 2 tablespoons of peach puree.
- Slowly pour the chilled Prosecco over the puree, allowing it to mix gently.
- Garnish with a slice of peach if desired and serve immediately.

For a non-alcoholic version, substitute sparkling water for Prosecco.
