Frosting Base
  • 1 cup unsalted butter softened
  • 4 cups powdered sugar sifted
  • 2 tablespoons fresh lemon juice preferably from organic lemons
  • 1 tablespoon lemon zest freshly grated
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Prepare the Frosting
  1. In a mixing bowl, beat the softened butter with an electric mixer until creamy.
  2. Gradually add the sifted powdered sugar, mixing on low speed until combined.
  3. Add the fresh lemon juice, lemon zest, vanilla extract, and salt, then mix on medium speed until smooth and fluffy.
  4. If the frosting is too thick, add a little more lemon juice to reach desired consistency.
