Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter melted
Filling
  • 3/4 cup fresh key lime juice
  • 1 can sweetened condensed milk
  • 3 large egg yolks
Topping
  • 1 cup heavy whipping cream for whipping
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
  3. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  4. Bake for 8-10 minutes until golden. Remove and let cool.
Make the filling
  1. In a bowl, whisk together key lime juice, sweetened condensed milk, and egg yolks until smooth.
  2. Pour the filling into the cooled crust.
  3. Bake for an additional 15 minutes. Remove from oven and let cool.
Prepare the topping
  1. In a mixing bowl, whip the heavy cream until soft peaks form.
  2. Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
  3. Spread the whipped cream over the cooled pie.
Serve
  1. Chill the pie in the refrigerator for at least 2 hours before serving.
  2. Slice and enjoy your key lime pie!
