Method
Prepare the crust
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom and up the sides of a 9-inch pie dish.
- Bake for 8-10 minutes until golden. Remove and let cool.
Make the filling
- In a bowl, whisk together key lime juice, sweetened condensed milk, and egg yolks until smooth.
- Pour the filling into the cooled crust.
- Bake for an additional 15 minutes. Remove from oven and let cool.
Prepare the topping
- In a mixing bowl, whip the heavy cream until soft peaks form.
- Add powdered sugar and vanilla extract, and continue to whip until stiff peaks form.
- Spread the whipped cream over the cooled pie.
Serve
- Chill the pie in the refrigerator for at least 2 hours before serving.
- Slice and enjoy your key lime pie!
