Method
Prepare the Chicken
- Season the chicken thighs with salt, black pepper, garlic powder, onion powder, and paprika.
Sauté
- Set the Instant Pot to 'Sauté' mode and add olive oil. Once hot, add the seasoned chicken thighs skin-side down and brown for about 4-5 minutes.
- Flip the chicken thighs and brown the other side for another 4-5 minutes.
Pressure Cook
- Remove the chicken thighs and set aside. Pour in the chicken broth, scraping the bottom of the pot to deglaze.
- Return the chicken thighs to the pot, close the lid, and set to 'Pressure Cook' for 10 minutes.
Release and Serve
- Once cooking is complete, allow for a natural release for 5 minutes, then quick release the remaining pressure.
- Serve the chicken thighs with the cooking liquid spooned over the top.
