Ingredients
  

Salad Base
  • 1 head iceberg lettuce washed and chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup carrots shredded
  • 1/2 cup red onion thinly sliced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large salad bowl, combine the chopped iceberg lettuce, cherry tomatoes, cucumber, shredded carrots, and red onion.
  2. In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for up to 30 minutes before serving.
