  • 1/2 cup red onion soaked in cold water for 10 minutes if desired
For the Dressing
  • 1 cup Greek yogurt can substitute with avocado
  • 2 tablespoons lemon juice can substitute with lime juice
  • 1 tablespoon Dijon mustard or honey mustard for a sweeter option

  • to taste pepper

Method
 

Preparation
  1. Gather all fresh ingredients like cooked chicken, crisp vegetables, and flavorful herbs.
  2. Chop your favorite veggies such as celery, bell peppers, and red onion into small pieces.
  3. Shred the cooked chicken into bite-sized pieces using two forks.
  4. In a separate bowl, whisk together Greek yogurt, lemon juice, mustard, salt, and pepper until creamy.
  5. Gently fold the shredded chicken and chopped veggies into the dressing until evenly coated.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  7. Serve the salad on a bed of greens or in a sandwich and enjoy!
