Ingredients

For the Potatoes
  • 2 lbs baby potatoes (halved) Red or Yukon Gold work beautifully.
  • 4 tablespoons unsalted butter Feel free to substitute with olive oil for a dairy-free option.
  • 4 cloves garlic (minced) Adjust to taste for your family's preference.
  • 1 teaspoon salt Use sea salt for a gourmet touch.
  • 1/2 teaspoon black pepper Freshly cracked is best.
For Garnish
  • 2 tablespoons fresh parsley (chopped) You can use chives or thyme as alternatives.
  • 1/4 teaspoon red pepper flakes Skip if you prefer a milder dish.

Method

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the potatoes into bite-sized cubes, keeping the skin on.
  3. Melt butter in a small saucepan over low heat, then stir in minced garlic until fragrant—about 1-2 minutes.

  5. Spread the coated potatoes onto a baking sheet in a single layer.
  6. Roast in the preheated oven for about 25-30 minutes, flipping halfway through.
  7. Optional: Garnish with fresh parsley before serving.
