Ingredients
  

Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Topping
  • 1/4 cup granulated sugar for caramelizing

Method
 

Prepare the Cookie Dough
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cookies
  1. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  3. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Caramelize the Sugar
  1. Once the cookies are completely cooled, sprinkle a thin layer of granulated sugar on top of each cookie.
  2. Using a kitchen torch, carefully caramelize the sugar until it forms a crispy, golden crust.
  3. Allow the cookies to cool for a minute before serving to let the sugar harden.
