Ingredients
  

For the Marinade
  • 4 pieces Chicken thighs boneless, skinless
  • 2 tablespoons Olive oil
  • 2 pieces Chipotle peppers in adobo sauce
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 2 tablespoons Lime juice
For Cooking
  • to taste Salt
  • to taste Pepper
  • optional Fresh cilantro for garnish

Method
 

Preparation
  1. Marinate your chicken by combining olive oil, lime juice, and spices in a bowl. Coat the chicken thoroughly and let it marinate for at least 30 minutes for maximum flavor.
  2. Preheat your grill or skillet to medium-high heat, around 400°F.
Cooking
  1. Cook the marinated chicken for about 6-7 minutes on each side until a nice char forms and the internal temperature reaches 165°F.
  2. Rest the chicken for 5 minutes after cooking to allow the juices to redistribute.
  3. Slice the rested chicken into strips or cubes for serving in burritos, salads, or tacos.
Serving
  1. Serve with fresh cilantro and lime wedges for an extra burst of flavor.
