Ingredients
  

Marinade
  • 1 cup coconut milk full-fat for creaminess
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon lime zest
  • 2 tablespoons honey or maple syrup
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Chicken
  • 4 pieces chicken breasts boneless and skinless

Method
 

Marinate the Chicken
  1. In a mixing bowl, whisk together coconut milk, lime juice, lime zest, honey, garlic, ginger, salt, and black pepper.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade.
  3. Grill the chicken for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  4. Let the chicken rest for a few minutes before slicing.
Serve
  1. Serve the grilled chicken with lime wedges and garnish with fresh cilantro if desired.
