  • 1/2 teaspoon black pepper Omit if you prefer a milder dish
  • 3 tablespoons butter Olive oil is a great substitute for a lighter option
For Serving
  • 2 tablespoons sour cream Greek yogurt works as a healthy alternative
  • 2 pieces green onions (sliced) Optional but highly recommended
  • 1/4 cup jalapeños (sliced) Skip if you prefer a milder version

Preparation
  1. Start by peeling and grating your potatoes into a large bowl. Rinse them under cold water until the water runs clear, then drain thoroughly to remove excess starch.
  2. Using a clean kitchen towel, squeeze the grated potatoes to eliminate any moisture. This step is crucial for achieving that perfect crispy texture when cooked!
Cooking
  1. Preheat a large skillet over medium heat and add a generous amount of oil or butter. You want it sizzling hot before adding the potatoes—this ensures they fry beautifully.
  2. Carefully spread the grated potatoes evenly in the skillet. Cook without stirring for about 5-7 minutes until the bottom is golden brown and crispy.
  3. Gently flip the hashbrowns using a spatula, and sprinkle your favorite cheese generously on top. Cover the skillet with a lid and cook for an additional 5 minutes until the cheese melts.
  4. Once everything is perfectly golden and cheesy, season with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired.
