Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 1/4 cup unsalted butter melted
Filling
  • 8 ounces cream cheese softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream whipped
  • 1 tablespoon lemon juice
Topping
  • 1/2 cup fresh berries for garnish
  • 2 tablespoons mint leaves for garnish

Method
 

Prepare the Crust
  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
  2. Evenly distribute the mixture into serving cups and press down firmly to form the crust.
Make the Filling
  1. In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Add sugar, vanilla extract, and lemon juice. Mix until well combined.
  3. Gently fold in the whipped heavy cream until fully incorporated.
Assemble the Cups
  1. Spoon the cheesecake filling over the crust in each cup, smoothing the top.
  2. Refrigerate for at least 45 minutes to set.
Serve
  1. Top each cheesecake cup with fresh berries and mint leaves before serving.
