Ingredients
  

Protein
  • 1 lb Ground Beef or ground turkey
  • 1 lb Chicken Breast diced
Vegetables
  • 1 cup Bell Peppers chopped
  • 1 cup Onion chopped
  • 2 cups Zucchini sliced
  • 1 cup Corn frozen or fresh
Condiments and Spices
  • 2 tbsp Olive Oil for cooking
  • 1 tbsp Garlic Powder
  • 1 tbsp Chili Powder
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
Toppings
  • 1 cup Shredded Cheese optional
  • 1 cup Sour Cream optional

Method
 

Preparation
  1. Preheat the Blackstone griddle over medium heat.
  2. In a mixing bowl, combine ground beef or chicken with garlic powder, chili powder, salt, and black pepper.
  3. Chop all vegetables and set aside.
Cooking
  1. Add olive oil to the griddle and let it heat up.
  2. Add the seasoned meat to the griddle and cook until browned, about 10-15 minutes.
  3. Add chopped vegetables and corn to the griddle, stirring occasionally, and cook for an additional 10-15 minutes until vegetables are tender.
  4. If using, sprinkle shredded cheese over the mixture and cover until melted.
Serving
  1. Serve hot with sour cream on the side if desired.
