Ingredients
  

Beans
  • 2 cups black beans cooked or canned
Vegetables
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium bell pepper diced
  • 1 cup tomato diced
Spices
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Liquid
  • 1 cup vegetable broth
Garnish
  • 1/4 cup cilantro chopped
  • 1 lime lime cut into wedges

Method
 

Prepare the Ingredients
  1. Dice the onion, bell pepper, and tomato. Mince the garlic.
Cook the Vegetables
  1. In a saucepan, heat a little oil over medium heat. Add the onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add the garlic and cook for another minute until fragrant.
Add Beans and Spices
  1. Stir in the black beans, diced tomato, cumin, chili powder, salt, and pepper.
Simmer
  1. Pour in the vegetable broth and bring to a simmer. Cook for about 20 minutes, stirring occasionally.
Serve
  1. Remove from heat, garnish with chopped cilantro, and serve with lime wedges.
