Method
Prepare the Vegetables

Mix the Casserole
- In a mixing bowl, combine the cooked rice, black beans, corn, sautéed vegetables, shredded cheese, cumin, chili powder, salt, and black pepper.
- Mix well until all ingredients are evenly distributed.
Bake the Casserole

- If using, sprinkle bread crumbs and parmesan cheese on top.
