Ingredients
  

Vegetables
  • 3 medium bell peppers any color, diced
  • 1 medium onion diced
  • 2 cloves garlic minced
Casserole Base
  • 1 cup cooked rice white or brown
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup shredded cheese cheddar or mozzarella
Seasoning
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Topping
  • 1/2 cup bread crumbs optional
  • 1/4 cup parmesan cheese optional

Method
 

Prepare the Vegetables
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the diced bell peppers, onion, and garlic until softened, about 5-7 minutes.
Mix the Casserole
  1. In a mixing bowl, combine the cooked rice, black beans, corn, sautéed vegetables, shredded cheese, cumin, chili powder, salt, and black pepper.
  2. Mix well until all ingredients are evenly distributed.
Bake the Casserole
  1. Transfer the mixture to a greased baking dish.
  2. If using, sprinkle bread crumbs and parmesan cheese on top.
  3. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

  1. Let the casserole cool for a few minutes before serving. Enjoy!
