Preparation
- Preheat the grill to medium heat (about 350°F).
- Rinse the chicken under cold water and pat dry with paper towels.
- Rub the chicken with olive oil and season generously with the spice mixture, ensuring to coat inside the cavity as well.
Cooking
- Open the can of beer and take a few sips to make space. Place the can inside the chicken's cavity.
- Stand the chicken upright on the grill using the beer can holder or directly on the grill grates.
- Close the grill lid and cook for about 1 hour, or until the internal temperature reaches 165°F in the thickest part of the thigh.
- Carefully remove the chicken from the grill and let it rest for 10 minutes before carving.
