Method
Prepare the Filling
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
- Stir in cumin and chili powder, mixing well. Remove from heat and stir in shredded cheddar cheese.
Assemble the Enchiladas
- Preheat the oven to 350°F (175°C).
- Spread 1/2 cup of red enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with a portion of the beef mixture, roll tightly, and place seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top of the rolled tortillas.
- Bake in the preheated oven for 20 minutes, until heated through and bubbly.
Serve
- Remove from the oven and let cool for a few minutes before serving.
- Garnish with additional cheese, sour cream, or cilantro if desired.
