Beef Enchiladas with Red Sauce

Ingredients
  

Filling
  • 1 lb ground beef preferably 80/20 for flavor
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup cheddar cheese shredded
Sauce
  • 2 cups red enchilada sauce store-bought or homemade
Assembly
  • 8 pieces corn tortillas warmed

Method
 

Prepare the Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet, cooking until the onion is translucent.
  3. Stir in cumin and chili powder, mixing well. Remove from heat and stir in shredded cheddar cheese.
Assemble the Enchiladas
  1. Preheat the oven to 350°F (175°C).
  2. Spread 1/2 cup of red enchilada sauce on the bottom of a baking dish.
  3. Fill each tortilla with a portion of the beef mixture, roll tightly, and place seam-side down in the baking dish.
  4. Pour the remaining enchilada sauce over the top of the rolled tortillas.
  5. Bake in the preheated oven for 20 minutes, until heated through and bubbly.
Serve
  1. Remove from the oven and let cool for a few minutes before serving.
  2. Garnish with additional cheese, sour cream, or cilantro if desired.

Notes

For a spicier version, add diced jalapeños to the beef mixture or use a spicy enchilada sauce.
